Benecol® Blueberry Oat Muffins

    baking powder

  • 180ml
    honey or maple syrup

    Greek yogurt
  • 1 tsp
    vanilla extract

    fresh blueberries
  1. Preheat your oven to 180°C (Gas Mark 4) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, oats, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the Benecol® butter and honey/maple syrup until light and fluffy. Add the eggs, Greek yogurt, and vanilla extract, and mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Gently fold in the fresh blueberries.
  6. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the centre comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
