Peanut Butter and Raspberry Frozen Yogurt Protein Bites

We partnered with the wonderful Síomha to create what could quite possibly be the “little treat” of the Summer. Roll up the sleeves and let’s dig in. Each batch makes 12 bites and it’s okay to have between 2 and 4 of these each day within your daily plant stanols intake. Best to freeze the rest for another day. Each bite contains approximately 0.67g of plant stanols. Recipe contains peanuts.

  • 4
  • 2 tbps
    peanut butter
  • 3/4 tbps
    maple syrup
  • 2 scoops
    chocolate protein powder
  • 50g
    50g fresh raspberries
  • 1
    Handful of chopped roasted peanuts (save some for garnish)
  • Pinch of sea salt
  • 200g
    dark chocolate
Method
  1. Mix together the yogurt, protein powder, peanut butter, and maple syrup until smooth.
  2. Taste and adjust sweetness as needed, depending on the protein powder; sometimes more maple syrup is needed.
  3. Add a few fresh raspberries for extra freshness.
  4. Place spoonfuls of the mixture onto a lined tray and place in the freezer for about 2 hours to firm up.
  5. Melt the dark chocolate.
  6. Dip each frozen bite into the melted chocolate and top with chopped peanuts. That bit is really fun.
  7. Store the bites in the freezer until you are ready to eat. Before serving, allow them to defrost for about 10 minutes.
