Orange and Cranberry Scones

Cholesterol-lowering scones with orange and cranberry. Note: with a batch of six scones, each scone contains approx 0.7g of plant stanols. Plant stanol ester has been shown to lower cholesterol. High cholesterol is a risk factor in the development of coronary heart disease. The beneficial effect has been shown with a daily intake of 1.5-3.0g plant stanols, as part of a healthy diet and lifestyle.

Ingredients
  • 240g
    whole wheat or spelt flour
  • 60g
  • 30g
    unsweetened dried cranberries
  • 1
    oranges - zest only
  • 2-3 tbsp
    honey
  • 120g
    Greek yogurt
  • 1 tsp
    baking powder
  • Pinch of salt
Method
  1. Preheat oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. Mix flour, baking powder, and salt. Cut butter into flour until crumbly.
  4. Stir in cranberries, orange zest, honey, and yogurt to form a dough.
  5. Roll dough into a circle, cut into wedges, and bake for 12–15 minutes.
