Irish Pancakes

1 xBord Bia Quality Assured egg

300mlmilk

60gready to eat dried apricots chopped

1tbsp (30g)Buttery Taste Spread
Method
- Sift the flour and salt into a mixing bowl and make a well. Crack the egg into the well and half the milk.
- Slowly stir flour into the liquid until fully mixed and then beat to make a smooth batter, stirring in the remaining milk once smooth.
- COOKING
Heat a non-stick frying pan until hot and then reduce to medium heat and ladle enough batter onto the pan so that the pan is thinly covered. - Cook on medium heat for 1-2 minutes or until bubbles rise to the surface and then flip to cook the other side. Keep warm until ready to serve.
- Spread over with Buttery Spread and serve with apricots
