Benecol® Vanilla Cupcakes

Fun, easy and fluffy, our Benecol® Cupcakes are a great way to start any weekend. This recipe makes 12, plenty for the whole family.

    caster sugar
  • 110g
    plain flour
  • 2tsp
    baking powder
  • 1/4 tsp
  • 2
    medium eggs
  • 1 tsp
    vanilla extract
  • 1/2
    pack of chocolate eggs
  • 100g
    icing sugar
  • 15ml
    warm water


  1. Preheat the oven to 180C/ 350F / Gas 4. Line a cupcake tin with paper cases.
  2. Put the Benecol spread and sugar in a bowl and beat until pale and fluffy.
  3. Sift the flour, baking powder, and salt into the bowl.
  4. Add the eggs and vanilla to the bowl and combine.
  5. Spoon the mixture into the paper cases.
  6. Bake for 18 to 20 minutes until risen and golden.
  7. Cool in the tin for 10 minutes, then transfer to a wire rack and decorate.

Each vanilla cupcake contains approximately 0.6g plant stanols*

Plant stanol ester has been shown to lower cholesterol. High cholesterol is a risk factor in the development of coronary heart disease. The beneficial effect has been shown with a daily intake of 1.5-3.0g plant stanols, as part, of a healthy diet and lifestyle.
